Washington, D.C. and surrounding areas, exactly where I live, are about to be pounded, stomped on, and hammered with what the forecasters are saying is the hardest snow hit since the 20s. Okay. That’s quite impressive. Only thing, they’ve put the fear of the end of the world in the metro area, affecting 85 million of us. If you’ve ever lived in a region that enjoys inclement weather, then you know how panicked we get. Salt is precious. House brooms become your essential best friend. The grocery stores are nearly empty, as if the apocalypse was really happening. This is all very real. Not to be underestimated.
But it’s also amazing how much media and impassioned meteorologists can do to our routine. They have “scared” us into stockpiling with foods we’d never really eat. My thinking is this: how much milk, eggs, butter and cheese can one eat in two days of hibernation and seclusion? Even if those items were the only items were had in hand, could we really eat 12 eggs, an entire loaf, one whole gallon and two blocks of cheese in one day? Doubt it. But, let’s go with it. Forunately, if you’re reading this, your first world problems have more to do with deciding which movie you’re going to watch on Netflix this weekend. Food probably abounds in your pantry, so you’ll be left with the hard decision of making chicken or beef. Since I get your pain, I’m going to help you out a little and suggest 7 perfect soups you can make during the 36 hours of personal imprisonment. At least the elements are pretty look at while you’re stuck.
This is going to be epic. I’m ready.
Even if you’re not in the DC-area or Northeast, you can still enjoy robust and delicious food this season.
From some of my most talented foodie friends, here are some soups and stews to keep you busy in the kitchen, full in the belly, and happy in heart.
ROASTED CAULIFLOWER WITH HERBED CHICKEN
If your’e in the Northeast, please be very careful. Stay indoors. Do some cooking. Read. Connect with your family members. Rest. Be thankful. Care for others if and when it’s safe to.
Eat well, love unapologetically, pray with true intention, and take care of yourself.
