Re-Introducing Red Snapper Escovitch Recipe on LATINA.com

I was first inspired to play around with the über popular and beloved Jamaican red snapper escoviche dish by my friend A, who loves anything Caribbean. We frequent a local restaurant that serves up what I swear is the best authentic Jamaican food in all of Atlanta. Because A has developed a discriminating palate since we’ve been hanging out, I’m very careful to not indulge in my guilty pleasures when he’s around.

In order to satisfy his healthy appreciation for great food, I went on a trek to find the freshest snapper, descale, clean and cut its head in front of him, all so he could relish in my skill and in the dish’s flavors. Not bad of a feat, when the fish mongers at my farmer’s market are so willing to do it all for me (in the likely case I’m just not in the mood for all that tedious work).

I decided to share this recipe with my readers over at Latina.com and invite my regular Flanboyant Eats readers to be reacquainted with something I love to make and that my clients can’t get enough of!

So, mosey on over to LATINA here for my weekly column and read all about this yummy, sweet flavored and high in protein pescado; and super simple dish to make! It’s a sure winner at any family dinner; not to mention, if you dare get your pairing knives and lean over meticulously to scale and clean the fish, you’ll score some serious points with the guy!
