{All Around Latin America} Peruvian Vegan Potato Gratin Celebration of Hispanic Heritage Month

In continuation of the last post, my friend Morena shares a recipe from Peru. And it’s vegan, which very well might be the first intentional vegan recipe I’ve shared on Flanboyant Eats. I love the idea of the creamy potatoes with black olives!  Check out the last post for some background on my own experience with Peruvian cuisine and an the intro on Morena.
This is her second contribution to the All Around Latin America series.

FOR A HEARTY DINNER 

Pastel de Papas

This is a vegan version of the classic Pastel de Papas. My mom shared it with me a few months ago and it was love at first bite. I was so happy to discover this recipe because Pastel de Papas was definitely one of my favorite dishes growing up. However, the heavy amounts of cream and cheese wouldn’t fit into my healthy and vegan lifestyle anymore. Thanks to this version, I can now enjoy it whenever I want! This has everything I want in a recipe these days: healthy vegan ingredients and simplicity. The simplest the preparation, and the fewer the ingredients, the better. And of course I would serve it next to a huge green salad or lots of colorful steamed veggies.
